Prepared Mexican Street Corn

Mexican Street Corn is one of the better know desserts, treats, street cart snacks there are.

The are a lot of cities with Eloteros, men with street carts selling corn. Summer’s my favorite season because it’s when the eloteros and paleteros, ice cream men, are out. On a hot, summer day, hearing the elotero cry “Elotes” and ring his little bells is one of my favorite sounds. It also usually leads to a stampede of kids and adults running out to the sidewalk to buy street corn.

Mexican Street Corn is also great because it’s completely to taste. It’s something you can have “your way”. Don’t want mayo? Fine. Don’t like cheese? Ok. Prefer your corn with only mild seasoning? Done.

El Elotero can make your corn the way you want it. Even if you want it plain, with nothing on it.

In my family…

In my family corn is a big part of our summer. If we’re grilling, no matter the occasion, there’s always corn available. Everyone loves it, and like I said everyone gets it the way they want it.

Little kids usually eat it with just salt and lime on it. As they get older they add more; mayo, cheese, seasoning. Sometimes even melted butter.

A day of grilling without corn just isn’t the same. It leaves us feeling like something was missing. This usually leads to me and my aunt Yasmin running to get a snacks from the store.

Our family preferences….

We prefer using McCormick Mayo with lime juice because it adds a little extra bit of flavor and pairs great with the cheese and seasoning.

Mexican Street Corn Recipe Instructions

Gather all ingredients needed.

5 ears of corn, mayonnaise, Mexican crumbling cheese and seasoning sitting on an island.

Start by cleaning the ears of corn. Take all or most of the leaves off and pull as much of the silk (hair) off as possible.

Grill until browned and softened, turning occassionally. About 20 minutes.

Add mayo, cheese, and seasoning if wanted and to taste.

Mexican Street Corn

A simple way to cook your corn. Perfect for the grill.



Ingredients

  • 5 ears of corn
  • mayo
  • queso fresco (Mexican crumbling cheese)
  • seasoning, I prefer Valentina brand

Directions

  1. Clean corn by removing most if not all leaves and pulling of the silk.
  2. Place on hot grill until browned and softened, about 20 minutes. Turning occasionally so it browns on all sides.
  3. Remove from grill and set aside until cool enough to handle.
  4. Insert stick into base of corn.
  5. Add desired ingredients to taste.
  6. Enjoy!

Note:Like I said above, this is completely to taste. You can add what you want to it and in the amounts you want.
